Oat & banana muffins

Ingredients

250 ml Bokomo Traditional Oats

1 banana

125ml brown sugar

1 egg

125ml milk

60 ml raisins

250 ml flour

Pinch of salt

5 ml bicarbonate of soda

30 ml sunflower oil

Method

1. Blend the egg, banana, milk, oil and sugar.

2. Combine the oats, flour, raisins, salt and bi-carb together.

3. Combine the wet and dry mixtures together.

4. Spoon the mixture equally into 12 greased muffin tins.

5. Bake in a pre-heated oven at 160° for 20-25 minutes or until golden brown.

6. Allow to cool for 5 min before removing from muffin trays.
