Oat Chocolate & nut cookies

Ingredients

250 ml Bokomo Traditional Oats

80g slab milk chocolate

1egg

100 g mixed nuts (chopped)

150g chocolate chips

2,5ml vanilla essence

80-100g butter

80 ml brown sugar

80 ml white sugar

160 ml flour

Pinch of salt

1,25 ml baking powder

1,25 ml bicarbonate of soda

Method

1. Blend oats into fine powder using a blender.

2. Cream butter with both sugars.

3. Add eggs and vanilla essense to butter mixture.

4. Mix oats, flour, baking power and bicarb together.

5. Add chocolates and nuts, mix well.

6. Combine the 2 mixtures.

7. Roll mixture into 12 equal size balls (approx. 5 cm diameter).

8. Refrigerate for 2 hours.

9. Place on greased baking tray, spaced 5 cm apart.

10. Bake in a pre-heated oven at 160° for 15 - 20 min or until golden brown.

11. Remove from oven and gently place biscuits on wire rack to cool.
